OBSERVATIONS & CORRECTIVE ACTIONS: Observed quiches on downstairs prep table that, per manager, were cooked around 30 minutes prior, were not holding temperatures of 135F or higher and not cooling to proper temperature in the allotted time. Temperatures suggest quiches had not been out of temperature for an extended period of time. Quiches placed in walk in cooler by manager. Observed a deep container of potatoes in upstairs kitchen main make cooler, cooling with Saran Wrap covering potatoes. Potatoes put into shallow containers and left uncovered for proper cooling.
