Person in Charge removed item from make table to walk-in cooler to be cooled down to 41 degrees fahrenheit or below. Observed raw chicken being prepared at prep table above 41 degrees fahrenheit. Raw Chicken out at prep table less than 1 hour. Observed cooked chicken and egg rolls inside coca cola reach-in cooler above 41 degrees fahrenhiet. Person in Charge stated cocal cola cooler is turned of every night because they transfer product to walk-in cooler every night and restock coca cola reach-in cooler every morning. Cooked chicken and egg rolls were inside coca cola reach-in cooler less than 1 hour, Person in Charge removed items to walk-in cooler.
