OBSERVATIONS & CORRECTIVE ACTIONS: Observed cooked mushrooms and cooked onions on the steam line that were not reheated to the proper temp of 41 or below. The food was being reheated by the steam table instead of rapid reheating on the stove. Food was reheated properly.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed the wall behind the 3 compartment sink to be made of wood and absorbing water due to the paint wearing off. Discussed using a plastic (FRP) or stainless steel instead of wood in areas that would be exposed to large amounts of water.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed the wall behind the 3 compartment sink in the basement to have black mold like buildup on the wall. Observed sticky buildup on the floor around the bag-n-box area. Observed buildup/food debris on the floor under the fryers on the cooks line. Observed buildup on the wall under the dish area in the kitchen to have black build-up. Observed buildup under the equipment in the bar area.
