OBSERVATIONS & CORRECTIVE ACTIONS: Observed establishment has shellstock tags in a zipper-style plastic bag and tags are not identified with the dates the stocks are served on premises.

RECOMMENDED RESOLUTION: Potentially hazardous foods shall be maintained at a temperature of 135°F or above.
OBSERVATIONS & CORRECTIVE ACTIONS: Observed horseradish mashed potatoes (119°F) in the steam table outside of safe temperature range; cook stated that the potatoes had been cooked just prior to inspection, but that the steam table had not been turned on adequately prior to the food item being placed into the unit. Potatoes taken to be reheated to 165°F before being placed back into the functional steam table. Observed marinara (125°F) double-panned on the grill to be holding outside of safe temperature range. Marinara had been removed from the walk-in cooler and reheated less than two hours prior to inspection, so marinara was removed for reheating to 165°F before being placed back into the adequately heated water bath.
