OBSERVATIONS & CORRECTIVE ACTIONS: Observed black buildup on the inside walls of the ice machine. Observed black buildup on the inside of the self service soda machine ice chute. Both items cleaned at the time of inspection.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed food items in the traulsen reach-in cooler holding temperatures above 41 degrees. Cooler was unplugged. Manager stated it would have been off for less than one hour. All food items removed to cold holding in the walk-in cooler. Observed food and ambient temperatures in the walk-in cooler above 41 degrees. Person in charge adjusted thermostat on cooler and ambient temperatures immediately lowered to correct range. Temperature logs show that food temperatures were in the 30's earlier today. Food items out of range either discarded or cooled with ice.
