Beans were allowed to cool in large, deep, lidded, plastic buckets, and did not reach 41F or below in 6 hours or less. Discarded. Pork was allowed to cool in large, lidded, thick plastic container, and did not reach 41F or below in 6 hours or less. Discarded. Beef, prepared today, was allowed to cool on counter without active temperature control, and then placed into tall, plastic buckets. Removed to shallow sheet pans and placed in functioning cooler.
