OBSERVATIONS & CORRECTIVE ACTIONS: Observed a bin of chicken cooling on unused kitchen charbroil grill, to where the temperatures were below 135F. Per employee foods were done cooking approximately 30 or so minutes prior. Temperatures suggest food had not been out for an extended period of time. Food placed in walk in cooler immediately. Observed two containers of beef, a bin of charrizo and a bin of chicken cooling in make cooler and not in approved cooler with capacity to properly cool foods to the proper temperature in the alotted time. Foods discarded due to foods had not cooled within the 6 hour time fram.
