Establishment is missing the reminder and disclosure. OBSERVATIONS & CORRECTIVE ACTIONS: Observed a pan of nacho meat in walk in cooler that was not being cooled to the proper temperature in the alotted time, per the KCMO Food Code. Nacho meat was not being stirred to where bottom of pan was being stirred to the top for even cooling throughout. Nacho meat removed for reheating by employee. Observed three bins of queso dip in walk in freezer were not being cooled to the proper temperature in the alotted time. Queso dips were not being stirred to where cheeses at bottom of bins was being stirred to the top for even cooling throughout. Employee designated for proper stirring of cheeses.
