OBSERVATIONS & CORRECTIVE ACTIONS: Observed two containers of rice in garage area walk in cooler that were cooling in deep containers and covered, not allowing cold air to circulate and properly cool foods. Rice discarded. Observed a large pot of pinto beans in garage area walk in cooler that were in a large, deep container and covered, not allowing cold air to circulate and properly cool foods in the alotted time. Beans discarded by employee. Observed multiple containers of pinto beans on kitchen prep table, to be placed in hot case were not at 135F or higher. Per employee, beans were done cooking around a half hour or so prior and cooled before placing into hot case. All containers of pinto beans reheated to proper temperature.

Temperatures suggest meat had not been out for an extended period of time. Pork placed in cooler by employee. Observed several foods in garage area walk in cooler that were not maintaining temperatures of 41F or lower. When inspector observed large pot of pinto beans not cooled to proper temperature. Employee stated she placed the beans in walk in cooler hot. Manager believes the hot beans had raised the ambient temperature in cooler and potentially the foods. All foods observed out of temperature discarded. Ambient temperature went down to 41F.
