OBSERVATIONS & CORRECTIVE ACTIONS: Observed that the concentrations of the two Quat Sanitizing buckets were at 100ppm and not at the correct oncentration of 200-300ppm. Employee made new buckets and they were tested to ensure that they were at the correct concentration.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed numerous mice droppings on the shelf below the Prep Line Steam Table. Employee removed all of the items on the shelf and cleaned up the mice droppings. Observed numerous mice droppings on the shelves below the Prep Line Make Table Coolers. Employee removed all of the items on the shelves and cleaned up the mice droppings.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed that the light in the Walk-in Cooler is not adequate. Had to use a flashlight to see inside of the cooler when the door was closed.
