OBSERVATIONS & CORRECTIVE ACTIONS: Observed an employee wash his hands off with the sprayer by the dishwasher. Discussed with the employee and he washed his hands in the hand washing sink.

RECOMMENDED RESOLUTION:
OBSERVATIONS & CORRECTIVE ACTIONS: Observed some water damaged ceiling tiles in the Men's and Women's restroom. Observed excessive grease and food build up on the floors underneath the cooking equipment and other equipment on the front prep line. Observed excessive grease build up on the low walls behind the cooking equipment in the kitchen.

RECOMMENDED RESOLUTION:
OBSERVATIONS & CORRECTIVE ACTIONS: Observed dried food build up on the back of the handles of the tortilla chip drawers in the kitchen. Observed some build up in the bottom of the Reach-in Freezer. Observed some dried food build up and mold on some of the storage racks in the Walk-in Cooler. Observed some dried food build up in some of the containers on the inside of the Cold Drawers in the kitchen.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed that the ice scoop was sitting on top of a box on top of the large ice machine. Manager removed the scoop and stored it correctly. Observed a few knives being stored in the crack behind the knife holder and inbetween the wall. Manager removed the knives from the crack.

Manager stored the drinks on the bottom shelf, below and away from the consumer dishes. Observed an employee drink being stored on the front Prep Table in the kitchen. Employee removed the drink from the prep table.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed that the employee in the dishwashing area washed his hands with the sprayer and did not wash his hands for at least 20 seconds. Discussed with the employee and he washed his hands in the hand washing sink with soap and water for at least 20 seconds.

RECOMMENDED RESOLUTION:
OBSERVATIONS & CORRECTIVE ACTIONS: Observed that the concentration of the Quat Sanitizer coming out of the wall dispenser above the three compartment sink was at 100ppm and not at the correct concentration of 200-300ppm. The establishment has another wall dispenser by the mop sink which dispenses the same Quat Sanitizer and this unit is sanitizing at the correct concentration. Establishment will use this dispenser until the other one is calibrated.
