RECOMMENDED RESOLUTION:
OBSERVATIONS & CORRECTIVE ACTIONS: Observed the deli, high temp dish machine to be sanitizing below 180F degrees. Temperature gauge had a reading of 98F degrees. Inspector ran machine 2 times, and observed the heat booster to be on. ***Person in charge called service for repair at the time of inspection. Establishment to wash all dishes in the 3 compartment sink until dish machine can be repaired.
