Upon arrival and starting inspection in kitchen, inspector observed employees removing foods from coolers and date marking them. Inspector observed all food products dated at time of inspection were dated 01/28.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed lamb and vegetable stew on stove top was not maintaining temperatures of 135F or higher. Employee was unable to demonstrate how long food was out of temperature. Food discarded. Observed vegetables and sauce hot holding in right oven was not maintaining temperatures of 135F or higher. Temperatures suggest food had not been out of temperature for an extended period of time. Food reheated at time of inspection.

Observed a trash bag with raw frozen lamb stored on top of bagged produce in basement chest freezer. Observed two boxes of raw chicken stored above and next to containers of juice and above dough in walk in cooler. Chicken restored by employee. Observed multiple spices on spice shelf to right of cooking equipment without any lids. Lids placed on spices at time of inspection.

Per owner, food was thawed from frozen under cold running water in three vat sink and had been out for only two hours. Inspector had employee put foods in freezer for flash cooling.

Observed dish wash employee remove food debris from plate wares, place wares in dish machine and then remove wares and handle wares without washing hands. Observed employees throughout inspection change tasks on multiple occassios without washing their hands.

Observed multiple pans and food containers stored food contact side down on shelving unit above three vat sink with excessive sticky residue buil dup. Observed a knife in wall hold with dried produce build up on blade. Knife cleaned at time of inspection.
