Observed hoison sauce, oyster sauce, MSG and sugar all stored in containers with excessive, old crusty debris build up at cookline. Per oldest son, his father refills containers each day at opening, which is 11:30am. All foods discarded and containers removed for cleaning. Observed lettuce stored directly on back room Coke cooler shelves, to where mold is growing and lettuce in direct contact. Lettuce discarded.

Inspector observed a wooden board on top of a tub of bagged raw chicken. Per oldest son, the board was initially on the floor and then placed on top of tub of raw chicken. Chicken placed in cooler by son.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed two bins of sweet and sour chicken, a pan of crab rangoon, a bowl of chicken wings and a bowl of chicken kabobs in white reach in cooler were not date marked. Foods dated at time of inspection. Observed a bin of beef in 3 door True cooler that was not date marked. Beef dated at time of inspection. Observed a bin of chicken in make cooler that was not date marked. Chicken dated at time of inspection. Observed cooked chicken in Aquafina cooler not date marked. Chicken dated at time of inspection. NOTE: At beginning of inspection, inspector observed two sons putting date marking stickers on foods in various coolers, leaving kitchen with stickers and then returning. During inspection, inspector observed all cooked/prepped foods in all coolers and freezers throughout facility were date marked 01/27. No foods were observed with a different date than 01/27.
