OBSERVATIONS & CORRECTIVE ACTIONS: Observed that the ice paddle was sitting on top of the large ice machine upstairs. Manager removed the ice paddle from the ice machine. Observed some utensils being stored in containers of standing still water on the Expo Line. Discussed with the manager. Observed that the handle of one of the food scoops was coming into contact with the food in one of the food bins downstairs. Manager removed the scoop from the food bin.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed several employees that did not wash hands before putting on new gloves. Discussed with the manager and employees and they washed hands and put on new gloves. Observed that the dishwasher did not wash hands after touching dirty dishes and before handling sanitized dishes. Employee discussed with the dishwasher and he rewashed the dishes and washed hand in between dirty and clean dishes.

Manager had employee change the Quat Sanitizing bucket and it was tested to ensure that it was at the correct concentration.

Observed some dried food build up on the wall by the hand washing sink by the dishwasher. Observed some cracked floor tiles in the upstairs kitchen. Observed missing floor grout between numerous floor tiles in the upstairs kitchen. Observed food build up on the floors behind and on the side of the Reach-in Warmer upstairs. Employee swept up the build up. Observed some dust build up and debris build up on the walls by the hand washing sink and Reach-in Warmer upstairs. Observed some build up in the floor drain underneath the coffee station upstairs. Observed some debris build up in the trash area on the Expo Line. Employee swept out the build up. Observed excessive dust build up on the fan guards on the condenser in the Meat Walk-in Cooler downstairs. Observed some food build up on the floor in the Walk-in Freezer. Observed that some of the wall above the prep sink in the downstairs prep area by the meat slicer is chipped. OBSERVATIONS & CORRECTIVE ACTIONS: Observed black build up on the ceiling on the inside of the large ice machine upstairs. Employee covered the ice and cleaned out the build up. Observed some brown build up on the surface above the filter holder of the tea dispenser. Employee cleaned off the build up. Observed some dried food build up on some of the spatulas on the side of the ventilation hood upstairs. Manager removed the spatulas and had them washed. Observed some build up on the tea nozzles on the tea dispensers upstairs. Manager had employee replace the nozzles with new ones. Observed some dried food build up on some of the clean dishes on the shelf next to single service food containers on the low shelf in the Expo area upstairs. Employee removed the dishes and had them cleaned. Observed some dried food build up on the back surfaces of the meat slicer in the downstairs prep area. Employee cleaned off the build up. Observed excessive black build up in the left soda gun at the bar. Employee cleaned out the build up.

Observed excessive slime on the outside of the garbage disposal in the dish area upstairs. Observed some build up on the surfaces below the dish counters in the dish washing area upstairs. Observed dried food build up on the rolling cart with the waffle irons on it upstairs. Observed some grease build up on the side of the fryers.
