OBSERVATIONS & CORRECTIVE ACTIONS: Observed sweet and sour chicken, generals chicken, and chicken satay at the main make table and reach-in cooler with internal temperatures above 41F. PIC stated the food had been on the make table since 11am and food was moved to the walk-in cooler and walk-in freezer to cool down before use. All potentially hazardous foods that were in the make table or reach-in cooler less than 4 hours were moved to the walk-in cooler and freezer.

Observed the handle of the main make table reach-in cooler, right-most door to be in disrepair. Observed the veggie reach-in cooler to be leaking water onto the floor. Observed the walk-in freezer to be dripping water from the ceiling onto the floor. Observed the main make table and reach-in cooler unable to hold an ambient temperature of 41F or below. *****Establishment is NOT to use the main make table or main make table reach-in cooler for potentially hazardous foods until the cooler has been repaired.***** Observed broken gaskets on the main make table reach-in cooler.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed sweet and sour chicken cooling at room temperature on a baking sheet. PIC stated the food had been cooling 45 minutes and was less than 90F (see temp log). Chicken was moved to the walk-in cooler to continue cooling. Observed noodles in deep containers covered with lids in the walk-in cooler that had been cooling for 1.5 hours. Lids were removed to facilitate heat transfer and continue cooling. Food was less than 70F at time of inspection.
