CRITICAL Comply by : Sep 17, 2016 RECOMMENDED RESOLUTION: OBSERVATIONS & CORRECTIVE ACTIONS: Observed ribs in the walk-in cooler that had been cooked the day before and were not at the proper temp of 41 or below after the 6 hours allotted for cooling.
