RECOMMENDED RESOLUTION:
OBSERVATIONS & CORRECTIVE ACTIONS: Observed the main make table reach-in cooler unable to hold an ambient temperature of 41F or below. Foods put into the make table within 4 hours prior to inspection time were moved to the walk-in cooler. Foods held in the make table longer than 4 hours were discarded. Observed the bar reach-in cooler unable to hold an ambient temperature of 41F or below. PHF foods (milk) was discarded at time of inspection. Observed ice buildup inside the bar reach-in cooler on the condenser. Observed standing water in the bottom of the veggie make table reach-in cooler. Observed broken gaskets on the main make table reach-in cooler. Observed the hot water tank near the ice machine to be leaking onto the counter.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed a baking pan full of recently cooked chicken wings cooling on a bottom shelf below the meat slicer. Chicken wings were moved to the speed rack to continue cooling. Observed container of crispy noodles, cabbage, and sweet and sour sauce on the floor of the kitchen. Food was moved to shelves. Observed box of tomatoes and raw chicken on the floor of the walk-in cooler. Observed a container of duck on the floor of the walk-in freezer. Observed a baking tray full of raw chicken and also a baking tray of beef uncovered in the walk-in freezer. Observed baking pan of cooked cabbage and crab rangoons without a cover in the walk-in cooler. Observed crispy noodles and rice in the dry storage area without lids. Observed an open container of dumplings in the white chest freezer that have freezer burn. Food was discarded.

Chicken was moved to the walk-in cooler to continue cooling. Observed container of noodles cooling in the walk-in cooler with tight wrapping on container. Wrapping was peeled back to allow for heat transfer.
