OBSERVATIONS & CORRECTIVE ACTIONS: Observed cooked potatoes and queso cooling in separate large containers on a prep table at room temperature. Manager stated food had been cooling for about an hour. Manager then removed food to smaller containers and into a cooler to facilitate proper cooling.
