OBSERVATIONS & CORRECTIVE ACTIONS: Observed excessive build up on the food bins in the back storage area. Observed excessive dried build up on the red igloo on the floor by the three compartment sink. Observed excessive build up on the top and bottom surfaces of the wok cooking station. Observed excessive build up on the front door and handle on the Coke Reach-in Cooler. Observed grease build up on the top of the fryer.

RECOMMENDED RESOLUTION:
OBSERVATIONS & CORRECTIVE ACTIONS: Observed excessive build up on the managers shirt due to wiping raw shelled eggs and other foods on it without washing hands.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed excessive build up on the walls by the three compartment sink and the mop sink. Observed excessive build up on the floors throughout the entire establishment, behind equipment and underneath it. Observed build up on the floor in the Walk-in Cooler that is being used as dry storage. Observed build up on the walls surrounding the mop sink, wok cooking station and other areas.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed that the manager did not wash hands after handling raw shelled eggs. Manager wiped hands with raw shelled eggs on his shirt. Discussed with the manager and he washed his hands.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed some foods in the Coke Reach-in Cooler that were being held out of temperature. Foods were discarded by one of the managers. Food is listed in the temperature section and notated with a double *.
