RECOMMENDED RESOLUTION:
OBSERVATIONS & CORRECTIVE ACTIONS: Observed dish machine not sanitizing with bleach as there was no sanitizer bottle hooked up to the machine. Technician on-site replaced the bottle and primed machine, but machine was unable to reach proper bleach sanitizing concentration of 50-100ppm. After priming several more times, machine was finally able to reach 50ppm.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed dish machine to have heavy buildup in the drains, in the screens, on top of the machine doors, and inside the machine. Spoke with PIC regarding cleaning the dish machine every 24 hours.

RECOMMENDED RESOLUTION:
OBSERVATIONS & CORRECTIVE ACTIONS: Observed the pizza make table and reach-in cooler unable to hold an ambient temperature of 41F or below. Technician and PIC stated that a new make table has been ordered and should be installed later this week. The employees are using the True reach-in cooler next to the make table to hold foods for pizza preparation until new make table arrives. Per PIC, employees are only able to have foods out for 5 minutes at a time while preparing pizzas. Inspector received copy of work order for new make table ordered on 8/10/16.
