OBSERVATIONS & CORRECTIVE ACTIONS: Observed that the door seals of the Pantry Plate Cooler are in disrepair. Observed a leak coming from the hot water handle at the three compartment sink. Observed a water leak coming from the cold water line under the hand washing sink in the dishwashing area. Observed a broken handle of the sliding door of one of the wine coolers at the tasting bar.

Observed some dried build up on the blade of the table can opener in the back prep area. Manager had employee clean off the build up. Observed excessive food build up on some of the dishes on the clean dish rack by the three compartment sink. Manager had the employees remove the dishes and rewash them. Observed some dried food build up on one of the knifes in the knife rack in the desert prep area in the back prep area upstairs. Observed excessive black build up on the inside back wall of the ice bin in the servers area upstairs. Employee cleaned out the ice and build up. Observed some mold build up on the surface around the soda nozzles of the soda dispensing machine in the serves area upstairs.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed excessive food and debris on the floor underneath all of the equipment on the front prep line. Observed excessive build up on the low walls behind the large dishwasher upstairs. Observed dust build up on and around several of the ceiling vents throughout the back prep area upstairs. Observed build up on the low wall and floor behind the chemical cage by the large dishwasher upstairs. Observed some dust build up on and around the ceiling vent in the dishwashing area upstairs. Observed missing grout between the floor tiles throughout the entire establishment. Observed standing water and excessive build up in and around the floor drains at the side bar in the upstairs kitchen area. Observed some build up on the floor by the mop sink upstairs by the True Reach-in Freezer. Observed excessive build up on the floor to the right of the Main Bar Reach-in Cooler that they keep the cut garnish and half and half in. Observed some build up on the low shelf where the chemicals are stored to the left of the dishwasher in the tasting bar.
