OBSERVATIONS & CORRECTIVE ACTIONS: Observed beef sitting out on the counter with no formof cold holding and it temped at 55. Discussed using some form of colding holding during peak hours, and that the food cannot just sit out on the counter. PIC placed beef in the reach-in cooler.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed chicken being stored over ready to eat food in walk-in cooler. PIC moved the chicken to the proper area.

RECOMMENDED RESOLUTION: (A) Cooling shall be accomplished in accordance with the time and temperature criteria specified under § 3-501.14 by using one or more of the following methods based on the type of food being cooled: (1) Placing the food in shallow pans; (2) Separating the food into smaller or thinner portions; (3) Using rapid cooling equipment; (4) Stirring the food in a container placed in an ice water bath; (5) Using containers that facilitate heat transfer; (6) Adding ice as an ingredient; or (7) Other effective methods.
OBSERVATIONS & CORRECTIVE ACTIONS: Observed a large container of ribs in the walk-in cooler that were cooked the day before. The container was deep and did not allow the ribs to cool properly (see temp log).

OBSERVATIONS & CORRECTIVE ACTIONS: Observed buildup under the 3 compartment sinik area, near the grease trap. Observed buildup under the dish machine area. Observed buildup above and below the smoker on the wall. Observed major buildup at the bottom of the stairs leading in the fuse box area on the wall. Observed buildup under the cooking equiptment and prep counters in the kitchen area. Observed buildup on the walls throughout the ktichen.
