RECOMMENDED RESOLUTION:
OBSERVATIONS & CORRECTIVE ACTIONS: Observed 2 pans of cooked noodles cooling on the fast rack in the kitchen area. Noodles were not being cooled to the proper temperature in the allotted time according to the Food Code. Person in charge could not inform inspector when the noodles were cooked. Temperature suggested that noodles were cooked more than 1 hour prior to the inspection time. Noodles observed 78-80 degrees Fahrenheit. See temp log. Noodles discarded.
