Observed excessive build up on the floor around the Reach-in Freezer on the prep line. Observed some cracked floors tiles in the kitchen. Observed some build up on the top of the grease trap. Observed excessive food build up and debris on the floor underneath the Reach-in Coolers in the kitchen. Observed excessive grease build up on the floor underneath the fryers. Observed some grease build up on the wall to the left of one of the fryers. Observed build up on the floor behind the dishwasher at the bar. OBSERVATIONS & CORRECTIVE ACTIONS: Observed some foods in the McCall Reach-in Cooler to the right of the large ice machine that were not left uncovered while cooling. Discussed with the employees and they discarded the foods due to improper cooling time.

Employee changed the bottle and it was tested to ensure that it was at the correct concentration.
