OBSERVATIONS & CORRECTIVE ACTIONS: Observed chicken noodle soup and tomato soup at the deli sandwich station held below proper hot holding temperature of 135 degrees or above for less than 2 hours (see temperature log). Person in charge rapidly reheated the soups to 165.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed corn relish cooling in a cold well at the salad bar station. Employee placed corn relish in reach in cooler to rapidly cool to 41 degrees. Observed egg salad, sliced ham, sliced turkey, sliced American cheese, cheddar cheese, swiss cheese at the deli station cooling in a cold well. Person in charge had employee place into a reach in cooler to rapidly cool to 41 degrees.
