OBSERVATIONS & CORRECTIVE ACTIONS: Observed cut cantaloupe in the walk in cooler dated 11.13.17. Employee discarded. Corrected on site. Observed bleu cheese crumble in the turbo air reach in cooler dated 11.11.17. Person in charge discarded. Discussed with Chef that ready to eat foods kept in the manufacturers container can be held to the day the manufacturer specifies on the container. Once food is removed and placed in separate containers facility is only granted 7 days to sell food.
