OBSERVATIONS & CORRECTIVE ACTIONS: Observed the following items to be cooled in large portioned-deep containers with fitted lids in the walk in cooler: taco beef, beef soup, Bibb dressing, and lime mint sauce. Person in charge moved all aforementioned to smaller portioned-shallow containers without fitted lids at the time of inspection.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed sliced tomatoes to be at a temperature above 41 degrees in the left make table (see temp log). Person in charge stated the tomatoes were prepped <2hrs and moved to the walk in cooler to reach a temperature of 41 degrees and below at time of inspection.
