OBSERVATIONS & CORRECTIVE ACTIONS: Observed 1 pan of chicken strips, 1 pan of chicken wings, 1 pan of fried chicken, and 2 hot dogs stored in a hot holding unit to be below proper hot holding temperature of 135 degrees or above for less than 2 hours(see temperature log). Person in charge stated the hot holding unit isn't holding properly and discarded the food items during inspection.
