OBSERVATIONS & CORRECTIVE ACTIONS: Observed foods (rice, curry, cauliflower) prepared 1-2 hours prior to inspection cooling on the chef's table serving line, Person in charge stated foods were meant to be stored on the line at the cold holding temperature of 41 degrees Fahrenheit. See temp log. Inspector discussed cooling foods at the proper temperatures before storing them for cold holding.
