OBSERVATIONS & CORRECTIVE ACTIONS: Excessive buildup on interior of both reach-in ovens (top and bottom ovens) in kitchen. Discussed cleaning frequency with Person in Charge.

OBSERVATIONS & CORRECTIVE ACTIONS: Yogurt at self-service line with internal temperature of 44F. Cut fruit medley (cantaloupe, honeydew, grapes) at self-service line with internal temperature of 48F. Person in Charge stated both items are stored cold in walk-in and placed on service line around 7am. Both items moved to walk-in because both items still within the 4-hour safety window. Pepperoni in pizza make table with internal temperature of 47F. Person in Charge stated the item was placed in the unit less than 1 hour prior. Item moved to walk-in as the food was within the 4-hour safety window.
