OBSERVATIONS & CORRECTIVE ACTIONS: Observed a employee use the three compartment sink setup to wash, rinse and sanitize his hands between touching dirty and clean dishes. Discussed with the employee and he washed his hands in the hand washing sink.

RECOMMENDED RESOLUTION:
OBSERVATIONS & CORRECTIVE ACTIONS: Observed some mold build up on the outsides of some of the dressing containers and boxes of food in the Chef Walk-in Cooler. Observed some mold build up on the storage racks in the Chefs Walk-in Cooler. Observed food and grease build up on the surface that holds the large open flame grill.

OBSERVATIONS & CORRECTIVE ACTIONS: Observed some foods in the Pizza Make Table Cooler that were being held out of temperature. Since the manager stated that the foods were not being held out of temperature for more than four hours they were allowed to be cooled down. Foods are listed in the temperature section and notated with a double *. Observed some foods in the Chefs station Cooler and on the cold line that were being held out of temperature. Observed some build up in the Simple Serving Line Reach-in Warmer. Observed some dried food build up on the back of the handles of the Oven by the large tilt kettles. Observed some food build up in the bottom of the Prep Table Freezer by the ovens and unused stove.
